Although Rice Krispies now make gluten-free cereal, it is 1) ridiculously expensive and 2) almost impossible to find. So, I improvised! I used crushed up Rice Chex, and it worked just as well - if not better! Here's the recipe:
What You'll Need:
1. 3 tbsps butter
2. Box of Rice Chex
3. 16 oz. bag of mini-marshmallows
4. baking pan (any size will do - the smaller the pan, the thicker the treats)
5. large sauce pan
6. large mixing bowl
Steps:
1. Melt the butter in large saucepan over medium-low heat.
2. Mix in entire bag of marshmallows. Stir consistently until all marshmallows are melted.

3. In a separate mixing bowl, crush up Rice Chex.
4. Mix Chex in with the melted marshmallows. Remove saucepan from heat.
5. In greased baking pan, spread out mixture until evenly distributed.
6. Refrigerate treats for 20-30 minutes. Remove and cut into 1-inch squares. Enjoy!
