This is one of my favorite recipes, and I'm super proud to call it all my own! It's surprisingly filling, but maybe not enough for a whole meal. I am not the biggest fan of kale, but its bitterness is just the perfect complement to the sweet squash. The turkey bacon gives a little more body to the meal.
You'll Need:
1. 1 butternut squash
2. 1 bunch of kale (8-10 large leaves)
3. 5 pieces turkey bacon
4. 4 tbsps olive oil
5. 1 large baking pan
6. 1 large skillet
Steps:
1. Preheat oven to 400 degrees.
2. Cube butternut squash into bite-sized pieces. It doesn't matter how big or small, as long as they are consistent.
3. Coat squash cubes with oil and place in baking pan. Bake for 30-35 minutes. Flip every 10 minutes.
4. Meanwhile, heat oil over medium heat in skillet. Place bacon strips in skillet.
5. Cook bacon on medium heat, flipping every 1-2 minutes. Set aside on paper towel.
6. Place kale in skillet. Cook down until slightly wilted but crisp. Add oil as needed.
7. Once squash is cooked, combine all ingredients in skillet and toss with oil. Let cool and enjoy!
