I am guilty of eating the same two meals for breakfast everyday - either a simple bowl of cereal or fried eggs. With all of the snow days this week, I was inspired to try something new. Here's a very simple but yummy recipe to change things up!
You'll Need:
1. 2 eggs
2. 1/2 red bell pepper
3. 1 red potato
4. 1/2 summer squash
5. 1/4 cup half and half
6. 1 large skillet
7. 1 baking pan
8. Olive oil
This is another easily-modified recipe. If there's a veggie you like better than squash, just toss it in!
Steps:
1. Preheat oven to 400 degrees.
2. Dice potato, summer squash, and red bell pepper into bite-sized pieces.
3. Bake veggies for 15-20 minutes, or until potatoes are easily pierced by a fork.
4. Place skillet over medium-high heat.
