There was a massive snow storm here in D.C. today, which means I got to experiment in the kitchen! I decided some comfort food was in order, so I went with these super yummy cinnamon rolls. I had never tried making cinnamon rolls before, and honestly I was very nervous they would come out terrible. Wit
You'll Need:
For the Dough:
1. 1/4 cup unsalted butter
2. 1/2 cup sugar
3. 2 eggs
4. 2-1/4 tsp yeast packet (from pizza crust mix package)
5. 1 cup warm water
6. 3-1/4 cups Gluten Free Pizza Crust Mix
7. gluten free flour as needed for dusting
8. 2 ft waxing paper
9. 1 baking sheet
10. 1 large mixing bowl
For the Filling:
1.1/4 cup unsalted butter (melted)
2. 1/2 cup brown sugar
3. 2 tsp ground cinnamon
For the Icing:
1. 1 1/2 cup powdered sugar
2. 1 tsp vanilla
3. 4 tbsp water
I didn't look inside the pizza crust mix before going shopping for ingredients, and only later found out that yeast comes with it! Now I have lots of yeast for the next time I need it, but oh well!
Steps:
1. Preheat ove n to 375 degrees.
2. Add 1 tbsp of sugar to the warm water. Sprinkle the yeast packet on top of water and let sit for 5 minutes. Cream together the butter and sugar. Add eggs and beat until there are no lumps.

3. Add the yeast mixture to the butter and egg mixture and blend. Add in the pizza crust mix and blend for two minutes.
4. Dust 2-foot long sheet of wax paper with gluten-free flour. Spread batter over the length of the wax paper. Using the warm water, wet your hands and press the batter outward to fill the sheet. Once spread out, brush melted butter over the batter.
5. Combine the cinnamon and sugar and then sprinkle mixture over the batter.
6. Carefully roll the batter in on itself starting with the short edge.
7. Cut the roll into 1-inch slices and place on greased baking sheet. Let rolls rise for 30 minutes in a warm place.
8. Place rolls in oven. While rolls are baking, combine powdered sugar, water, and vanilla in small bowl. Whisk until icing becomes creamy.
9. Remove rolls from oven and let cool for 5 minutes. Transfer to plate and drizzle icing over rolls. Enjoy!
