This is my very first recipe I tried using my Crock Pot - and it was a complete success! Plus it made so much that I have enough for this week's lunch everyday! Another really easily modified recipe, you can pretty much add or substitute any veggies you'd like. I kept it pretty simple this time, but may add some more variety next time.
You'll Need:
1. 2 lbs. boneless skinless chicken breasts
2. 1/2 cup vegetable oil
3. handful chives (green part only)
4. 4 large carrots, chopped
5. 2 red bell peppers, chopped
6. 1 yellow bell pepper, chopped
7. 12 ounces red potatoes (2 to 3 medium)
8. 1/3 cup all-purpose gluten-free flour
9. 1 tbsp tomato paste
10. 2 tsps dried thyme
11. 4 cups low FODMAP chicken broth, plus more if needed
12. 1/4 cup minced parsley
13. 1 large skillet
14. 1 slow cooker
Note: chicken broth can have onions and garlic in it, so be sure to carefully read the labels.

1. Heat 1 tbsp of oil in skillet over medium-high heat. Brown chicken on both sides, about 5-8 minutes. Transfer to the slow cooker.

This recipe turned out so much better than I thought, and it was super duper easy. I'm definitely doing this one again!
