Okay, so. These are by far the best HEALTHY cookies I've ever had. I have to give credit to my sister Emily for introducing me to the original recipe, although I am not a fan of peanut butter (no, I am not an alien, yes, I did have a childhood) so I always opt out of that fourth ingredient. Hence, we come to my 3-Ingredient Cookies!
These are super easy to make and don't take long at all. The following recipe will make about 12 cookies, but it is easily modified to make more with equal parts bananas and gluten-free oats.
You'll Need:
3 ripe bananas
3 cups gluten-free oats
1 cup semi-sweet chocolate chips
OPTIONAL: 3 tablespoons smooth or chunky peanut butter
1 medium mixing bowl
1 baking sheet
Steps:
1. Preheat oven to 375 degrees.
2. In a medium mixing bowl, mush (no better word) bananas until they become a smooth consistency.
3. Add gluten-free oats to bananas and mix until oats are evenly distributed.
4. Fold in semi-sweet chocolate chips.
5. Form dough into silver dollar-sized discs and place onto greased baking sheet.
6. Bake in oven for 25 minutes or until tops of cookies become slightly browned.
7. Let cool for 5-10 minutes and enjoy!
NOTE: Because these don't rise like regular cookies, be sure to form your cookies however thick or thin you'd like them before you put them in the oven.

These are super yummy right out of the oven, especially while the chocolate chips are still melty! I usually reheat them after they've cooled because they can get a bit chewy. This recipe is also super easy to add anything you'd like into them, e.g. nuts, fruit, etc.... get crazy with it and share with me your own versions of these cookies! Enjoy!
