This is the first time I've attempted something like this, and WHAM - success! I even have the boyfriend-stamp-of-approval on this recipe. Super easy, and super yummy! Here it goes:
What You'll Need:
1 baking pan
2 ripe avocados
4 eggs
1/2 bunch scallions (green parts only)
2 slices of cheddar cheese (mild or sharp - your choice)
Salt and pepper
Steps:
1. Preheat oven to 425 degrees.
2. Halve both avocados and remove pit.
3. If needed, scoop out some of the avocado in order for the egg to fit in the center.
4. Set each avocado half in baking pan. TIP: I sort of leaned each against the sides, so they stood upright when I put the eggs in.
5. Crack eggs into center of each avocado half. (this may be a little messy!)
6. Bake for 8-10 minutes.
7. Remove from oven and place a half-slice of cheese on top of each yolk. Return to oven for 5 minutes.
8. Remove from oven, garnish with diced scallions, salt and pepper.
9. Enjoy!

I really liked this recipe because it was super easy AND really delish. It also was very filling - we enjoyed these on a "breakfast for dinner" occasion with some gluten-free toast and were completely satisfied. Next time I may add some bacon on top! :)
