I've tried out quite a few different pancake recipes, but this is definitely my favorite so far. I used King Arthur Flour's Gluten Free All Purpose Baking Mix, and it was super delicious. I used the recipe on the side of the box, with a little variation of my own.
You'll Need:
1 cup King Arthur Flour's Gluten Free All Purpose Baking Mix
2 tablespoons granulated sugar
1 egg
2 tablespoons melted butter
1 1/2 cups almond milk
1 banana
1 cup semi-sweet chocolate chips
Maple syrup
Medium mixing bowl
Large skillet
Steps:
1. Combine flour and sugar in mixing bowl.
2. Add egg, melted butter, and almond milk to dry mix.
3. Whisk together until batter is smooth with few to no lumps.
4. Heat skillet over medium heat and grease with butter or cooking spray.
5. Pour batter into pan, creating about 2-inch pancakes.
6. Sprinkle chocolate chips and sliced bananas into pancakes.
7. When pancakes look dry on the tops or they start to bubble, flip onto other side.
8. Let cool for 5 minutes and enjoy!

Being the poor graduate student I am, I actually do not own a microwave. So I had to be creative in melting my butter over the skillet on low heat and then pour into the mix. I'm pretty sure that's why my batter came out way lumpier than I expected. Nevertheless, these still came out super yummy!
I am also the worst at making my pancakes look similar. Some came out super crispy, others way less so. Either way, they were all good! Enjoy!
