After being Celiac for 4 years, I have finally found pasta that doesn't taste like cardboard! And keeping with my love for vegetables, I often whip together this super easy recipe for my weekday dinners or even for special date nights. Like a lot of my recipes, this one is very easily modified, so feel free to get creative with it!
What You'll Need:
1. 1 lb gluten-free pasta
2. 1 zucchini
3. 1 summer squash
4. 1 container grape tomatoes
5. 1 red bell pepper
6. 1 yellow bell pepper
7. 1 tbsp olive oil
8. salt, pepper, and parmesan for seasoning
9. 1 large baking pan
10. 1 medium saucepan
11. 1 colander
Steps:
1. Preheat oven to 400 degrees.
2. Dice up all of vegetables into bite-sized pieces. Set aside tomatoes in separate bowl.
3. Toss together squash, zucchini and peppers with olive oil in the baking pan. Season with salt and pepper as you please.

7. Strain pasta in colander and immediately place in large bowl.
8. Combine vegetables and pasta, adding in the tomatoes, into the large bowl, tossing with salt and pepper to your liking.
