Hi everyone! My name is Kristen Voorhees, and I am currently living in Washington, D.C. Originally from the suburbs of New York, I moved down here for graduate school at the George Washington University for Public Administration with a focus on International Development (I know, quite a mouthful!). I graduate in May 2015, and hope to stay in the area to pursue a career in international development within the non-profit sector.
Lifestyle
In the spring of 2011, I was diagnosed with Celiac Disease. Since then, I have transformed my diet to completely eliminate gluten. The transition was extremely difficult in the beginning, but I have learned so much from others with Celiac, the internet and social media, and my doctors. The diet change definitely improved my stomach issues, but I have struggled with stomach pains even after my diagnosis. With the suggestion from my doctor (and advice from a close friend), I was introduced to the low FODMAP diet in December of 2014. I took the plunge and started the diet in January of 2015. I can't begin to express how helpful it has been for me. Not only have my stomach pains subsided, but it has helped me focus on my food intake and general triggers.
I also have a major love for yoga. I practiced during my undergraduate degree, and have recently rediscovered my passion for Vinyasa yoga. The low FODMAP diet coupled with my daily yoga classes has improved my digestive health, mood, and overall well being.
About This Blog
I hope to use this blog to share my experiences with the low FODMAP diet, gluten-free living, and yoga inspirations. I have a few favorite recipes that will be posted, and hope to collect others from my followers. Most importantly, I want to learn from others that have a similar passion for healthy living. Enjoy!
